    Evidence suggests that the gut microbiota plays an important role in host health and the development of non-communicable diseases. An increasing number of studies have shown that fermented products, particularly fermented dairy products, influence metabolic health. This study aims to demonstrate the health impacts of daily consumption of kefir on healthy and metabolic syndrome (MetS) subjects and to establish how fermented food consumption shapes the gut microbiome and provides health benefits to the consumer. The primary objective will be to evaluate whether and to what extent kefir consumption affects glucose metabolism. Secondary objectives include measures of lipid metabolism, inflammatory status, gut permeability and gut microbiome. The study also aims to identify metabolic and microbiome markers of health after milk Kefir consumption. The study consists of a randomised controlled, double-blind and double-arm (kefir and placebo group), parallel design in healthy subjects (kefir group n=10, placebo group n=11) and in subjects with metabolic syndrome (kefir group n=15, placebo group n=15). The study population will be adults of all ethnicities between 18 and 65 years old. Participants will either consume 200ml of kefir or 200ml of placebo daily. Participants will attend the NIHR clinical research facility baseline and once a month for 6 months. Anthropometric measurements, urine, stool and blood samples will be collected each time.
